Leftover Rice Recipes
Vegetable Fried Rice
This is one of the most quintessential vegetarian rice recipes you can make and is extremely tasty.
It takes about 10 minutes of preparation and 5 to 7 minutes to cook
Leftover rice – 4 medium size bowls
Vegetable oil – 2-3 tablespoons
Groundnut – ¼ bowl
Channa Dal or Toor Dal – 2 tablespoons
Potato – 1, medium
Onion – 1, medium
Capsicum – 1, small
Carrot – 1, small
Tomato – 1, medium
Turmeric – ½ tablespoon
Chilli powder (optional) – ½ tablespoon
Green Chilli (optional) – 1 or 2
Salt – to taste
Wash the vegetables and dice them up.
Heat oil in a kadhai and fry the groundnut and dal.
Once they are slightly brown, add the onion and green chilli.
After the onions turn light brown, add the vegetables, turmeric powder and chilli powder.
Stir and put on the lid. Allow the vegetables to get cooked.
Then add the rice and salt (to taste) and stir it well.
Then lower the flame and leave it for a minute or two.
